In today's world, food waste is a global challenge. According to the Food and Agriculture Organization of the United Nations, around 1.3 billion tonnes of food is wasted globally every year.Emerging technologies such as artificial intelligence (AI) are estimated to leverage the accessibility of big data for active training and yielding operational smart engines and predictable models. In this study, An ARIMA model is developed to predict the sales forecasting. The historical demand data were used to develop several models and the adequate one was selected according to three performance criteria; AIC, BIC and HQIC. The study shows that the best model that was selected from the three criteria is ARIMA (8,1,0). The result of the final sales forecast model also shows lower RMSE (Root Mean Square Error) as compared to the other models which indicates it as a better fit.
